Launching March 18, the Radisson Blu Aqua Hotel in Chicago will be offering “Modern Tea,” a twist on traditional afternoon tea created by the chefs at Radisson Blu Aqua Hotel.

Served alongside the hotel’s cozy 50-foot long fireplace, the high tea service features sweet and savory delights paired with a selection of teas, which will change seasonally. Guests can choose one of four tea tier options, including:

Traditional Tier consists of an assortment of savory and sweet bites like Smoked Salmon with watercress, cream cheese, and tomato confit on German chutney bread; Smoked Duck with red onion compote on mole bread; Cucumber with Swiss cheese and spicy aioli on ciabatta; Brie with cream cheese and pear compote on French baguette; and an assortment of house-made sweets.

Savory Tier offers an assortment of delectable small bites that seasonally change including Crab with creamy citrus dressing and arugula on Vietnam bread; Chicken Compote with mayo on rye bread; Grilled Vegetables with pesto on sun-dried tomato focaccia; Asparagus with guacamole on pumpernickel bread; and Truffle Deviled Eggs.

Sweet Tier consists of a variety of housemade sweets that includes Mini Chocolate Eclair, Seasonal Fruit Tart, Orange Crème Brûlée, Scones & Clotted Cream, and Macaroons.

Eastern Tier is inspired by the cuisine of the Middle East, and is comprised of traditional Baklava and Turkish Delight, Mutabbal, Cumin Chicken, Hummus with pita, and Shrimp with pita.

To complement the food, the hotel curated a selection of Rishi Teas—award-winning, organic loose-leaf teas formulated and hand blended in micro-batches direct from tea gardens around the world. Guests can select one tea from the list, which consists of Valerian Dream, Tangerine Ginger, Earl Grey Lavender, Jasmine Pearl Green Tea, Iron Goddess of Mercy, Vanilla Mint Chai Tea, Da Yu Lin Oolong, and Teahouse Macha.

The price is $35 per person, excluding gratuity and tax. Prosecco, Mimosas, and Bellinis are available at an additional cost.
