Hotel Hosts Confections Series With Local Chocolate Factory
On Sunday, Feb. 8, in anticipation of Valentine’s Day, Pastry Chef Evan Sheridan will host the second Artisan Confections Series at the Umstead Hotel and Spa in Cary, North Carolina.
The event will feature a cooking demonstration, tastings, and industry intelligence featuring Videri Chocolate Factory. In keeping with the hotel’s quest to celebrate great local and regional purveyors, the event will shine a light on Sam Ratto, a partner in Videri, whose chocolate factory is located in Raleigh.
Staged in The Umstead’s Salon room from 3 to 5 p.m., guests will be introduced to Ratto’s process of purchasing select beans from a handful of cacao plantations in Central and South America. These fair-trade and organic beans are turned into delicious, hand-crafted bar chocolate with the addition of cocoa butter and organic sugar.
Next, Chef Sheridan will use Videri’s 75 percent Trinidadian Chocolate to whip up a chocolate mousse, ideal for home entertaining. Guests will also get to sample other fine sweets and ask questions of Mr. Ratto and Chef Sheridan.
