I’m including another wild sage beer because it’s so seldom seen but works so well that perhaps it should be a trend. The musty sage notes lend a natural savory and dry character as does the wild Brettanomyces, which helps true ferment to dry. The leathery finish makes it complementary for long, slow-cooked meats.
