The Confidante’s Bird & Bone Restaurant Concludes Renovations
The Confidante hotel, located in Miami’s mid-beach neighborhood along famed Collins Avenue, is proud to announce the conclusion of a six-month renovation to its lobby-level Bird & Bone restaurant. Chef Richard Hales’ American inspired eatery—with his sought-after Hot Chicken, Florida Cheddar and Chive Biscuits, and American comfort food—may now be enjoyed by guests in a newly designed main dining room and charming outdoor terrace.
The restaurant’s new main dining room transports guests to a contemporary countryside farmhouse leaving feelings of mischief and wholesome grit. Sticking to Chef Hales’ commitment to locally sourced products, the room features accents by Wynwood design shop Chalk & Brush Co. Boasting more than 130 seats throughout the restaurant, the main dining room features tubular steel-frame chairs that complement the natural oak dining surfaces and midcentury modern accents.
Alongside the new design is the restaurant’s new extensive Sunday brunch menu. Signature dishes include a variety of options from light, healthy dishes to some of the Chef Hales’ heartier options for which he is known. Guests can savor fan favorites like Avocado Toast & Eggs with two poached eggs, Benton ham bits, pink salt, olive oil, hemp seeds and sprouts; Fried Chicken & Cornbread Waffle with Chef Hales’ award winning fried chicken, heirloom corn waffle, candied bacon, bourbon syrup and Tipsy Texan with BBQ brisket, smoked sausage, coleslaw, pickles, ZTB brioche bun, waffle fries.

Bird & Bone is open for breakfast Sunday through Saturday 7 a.m. to 11 a.m.; lunch Monday through Saturday 11 a.m. to 3 p.m.; brunch 11 a.m. to 3 p.m. on Sundays; dinner 6 p.m. to 10 p.m. Sunday to Thursday and 6 p.m. to 11 p.m. Friday and Saturday.
