From meat-packing district to bustling business neighborhood, The Publican has served as Fulton Market’s flagship restaurant for over a decade. With the long-awaited introduction of lunch, guests can expect many of the restaurant’s iconic shared plates such as smoked whitefish and barbecue carrots, as well as all new offerings like:

  • Mid-Day Prix-Fixe: A mid-day iteration of The Publican’s highly praised tasting menu, Kahan and Bayer have created a three-course “Pub-fixe” menu. Afternoon diners can choose from dishes like the “Porchetta Panzanella “ made with fava beans, puntarelle, avocado, and Publican Quality Bread ciabatta, and The Publican’s renowned Bouchot Mussels, steamed in a Belgian Lambic beer infused with celery, butter and garlic, paired with a side of frites.
  • Lunch Options: Look for lighter fare like the Lunch Board complete with rillettes, La Quercia ham, spiced ricotta, gem radish salad & Publican Quality Bread. The introduction of lunch also falls in tandem with the first ever Publican burger, made with Slagel Farm beef and topped with French Raclette cheese, roasted onions, a made from scratch cornichon aioli, sandwiched between two slices of 1979 Pullman Publican Quality Bread. For dessert, Executive Pastry Chef Erika Chan has crafted some exclusive hand-held sweets like cookie ice cream “Chan-wiches” and a cherry cheesecake hand pie made with sour cherries from Ellis Farm and whipped cheesecake filling.
  • ABV-Free Drinks: Head Bartender Melissa Romanos has crafted an array of spirit-free drinks for those serious about getting back to work. Romanos pulls from various global regions to create drinks like the Luna di Milano, which features juniper-infused verjus, topped off with cardamom, coriander, lemon and orange, perfect for enjoying al fresco on the restaurant’s charming 56 seat patio.

“Opening for lunch makes us much more accessible to a whole new crowd,” says Chef de Cuisine Sieger Bayer. “Not everyone can trek to the West Loop for dinner, but with lunch as an option, more people can partake in The Publican experience without having to coordinate a sitter or battle an extra commute.”
