China’s national spirit, sorghum-distilled baiju, has piqued interest stateside over the last year. One newcomer is Hong Kong Baiju, made at a distillery in Sichuan Province, that is the brainchild of Frenchman Charles Lanthier. Clean and grassy with notes of red fruits and green apple, it makes for a crisp Bloody Mary.
