Mintel’s January 2011 study, "Dining Out: A 2011 Look Ahead," reports that restaurant breakfast sales in the upcoming year are expected to outpace overall growth in the industry.

According to a Mintel forecast, breakfast will experience 2.6 percent real growth in 2011, while the general restaurant industry is predicted to grow by 2.3 percent.

Because of the anticipated popularity of breakfast, the American Egg Board is offering a complimentary copy of the reference booklet, "The Incredible Edible Egg: A Natural for any Foodservice Operation."

The 16-page guide covers everything foodservice operators needs to know about using eggs as a breakfast menu.

The American Egg Board says that eggs are essential for almost every foodservice operation because they are familiar, versatile, and convenient. They are also a low-cost food and a high-quality protein ingredient that can work in several dishes on the breakfast menu.
