Tequila’s less well-known cousin continues to make strides stateside with the arrival of Anchor Distilling’s Mezcal Amarás, made with 100 percent Espadín agave. Agave hearts are ground on a horse-drawn mill, then fermented in open pine containers before being distilled twice in copper pot stills. A slightly smoked aroma balances beautifully with tropical fruit sweetness.
