In conjunction with Harvest Restaurant Group, DeMarco was involved in all aspects of the opening of Roots’ second location in Morristown, N.J., and continued to oversee operations at both locations. DeMarco has also worked as executive chef for The Capitol Grille and Asia de Cuba, both in New York City.
