The team behind two Michelin-starred Oriole and Kumiko introduced Kikkō, the renovated 10-seat counter space below Kumiko that offers a 7-course omakase-style tasting menu and a variety of beverage pairings, launching on May 22.

A collaboration between Executive Chef Noah Sandoval and Chef de Cuisine Mariya Russell, Kikkō’s 7-course menu is priced at $130 per person, with beverage pairings available from Creative Director Julia Momose. Offering a complete dinner experience with a full view of dish preparation, Kikkō delivers the Kumiko team’s famed precision and mindful approach. The omakase-inspired menu, developed by both Sandoval and Russell, showcases high quality ingredients in thoughtful presentations, with courses including Golden Osetra Caviar with cured Hudson Canyon scallop, finger lime, and smoked soy; Confit Berkshire Pork and Carabineros Prawn dumpling with spring onion, coriander, and genmai; Mackerel with kombu sabayon and nasturtium; and Miyazaki Beef with sesame, golden cordyceps, and shio kombu. Kumiko’s beloved Japanese Milk Toast with fermented honey and summer truffle serves as Kikkō’s dessert course.

Kikkō’s beverage program remains a personal experience that begins with a short conversation with Momose on the guest’s preferences. Pairings, available for an additional $65, are divided into single-focus progressions of spiritfrees and Japanese saké, and mixed-pairing progressions including spirits and saké of Japan, a selection of exquisite offerings of saké, shochu and whisky from Japan, neat or on ice; cocktails and Japanese saké, a progression of cocktails and pours ranging from bright and refreshing to sultry and spirituous; and wine and Japanese saké, focused on an Old World wine selection intermixed with pours of saké.

Kikkō, a name that represents a type of “Kumiko,” or Japanese woodworking, is the Japanese hexagonal pattern resembling a tortoise shell and appears throughout the bar. Set in the darker subterranean space beneath Kumiko, Kikkō provides even more intimacy in a modern and polished nook-like setting. A vintage stereo, playing only vinyl, serves as a focal point of the space.

With the unveiling of Kikkō, the upstairs 8-seat bar at Kumiko led by Momose will now accept walk-ins, and expanded selection of a la carte bites will be available for all Kumiko guests. Reservations are required for Kikkō with three seatings at 5:30, 7:30, and 9:30 p.m., Wednesday through Sunday, and are available through Opentable.

Kumiko is open from 5 p.m. to 1 a.m. Wednesday through Saturday and 5 p.m. to 12 a.m. (midnight) on Sunday. They are closed on Monday and Tuesday. Reservations are available (and required at Kikkō) and walk-ins are accepted. Reservations can be made by calling 312.285.2912 and on OpenTable.
