August is National Sandwich Month, the ideal time to roll out some sandwich specials that will attract meat-eaters, flexitarians, and vegetarians alike.  The Soyfoods Council offers a selection of sandwich ideas featuring versatile soyfoods such as tofu and textured soy protein that combine the advantages of plant-based protein with all the flavor and flair your customers demand. Here are three soy-rich sandwich ideas, plus condiment suggestions to enliven your sandwich menu.

  1. Grilled Tofu BLT Sandwiches feature tofu “bacon” made by grilling batches of thinly sliced extra-firm tofu marinated in olive oil, smoked paprika and soy sauce.
  2. Buffalo Chicken Sloppy Joes with Blue Cheese Slaw offer the favorite flavors of Buffalo wings in a sandwich that combines textured soy protein and ground chicken.  The mixture is flavored with butter, onion, garlic, cayenne pepper sauce, Worcestershire sauce and ketchup. Blue cheese is crumbled into coleslaw that tops off this sandwich. It’s all served on whole-wheat burger buns.
  3. Curry Chicken Salad for sandwiches is made with cubed chicken, celery, cashews and golden raisins.  The dressing is a combination of mayonnaise, soft silken tofu, lemon juice and curry powder.

Don’t forget that soyfoods also create great sandwich condiments. Make your own Vegan Mayonnaise with extra-firm silken tofu, extra virgin olive oil, apple cider vinegar, Dijon mustard, and turmeric.  Globally inspired sandwiches get a flavor boost from condiments such as Black Soybean Salsa and Edamame Mango Relish. For sandwiches traditionally served with Ranch or Caesar salad dressing, you can make lighter versions of these dressings with soft silken tofu.
