Within the past few years, breakfast has become the fastest growing daypart of the restaurant industry, creating a breakfast war amongst companies across the country.

According to Packaged Facts, breakfast sales reached $47 billion in 2013, a 5 percent increase from 2012. Throughout the heated competition in the segment, Another Broken Egg Cafe has been successfully penetrating the breakfast sector, boasting 200 percent new unit growth over the past two years.

With 39 restaurants throughout 13 states, the award-winning breakfast, brunch, and lunch franchise is expected to more than double its U.S. footprint to 100 restaurant locations by 2018. The chain will focus on expanding its presence through franchise and company owned units, as well as nontraditional venues including hotels, casinos, and resort communities.

To augment the company’s growth strategy, Another Broken Egg Cafe has appointed one of its highest performing former franchisees, Kevin Armantrout, to COO. In his new position, Armantrout will be responsible for amplifying the brand’s growth by establishing new corporate locations in key markets. With sights set on entering the Dallas market, Armantrout will play an instrumental role in leading the company’s continued expansion efforts.

“As we prepare for our next stage of growth, it’s essential that we have all systems in order and the right people in the right positions to take the brand to the next level,” says Ron Green, CEO of Another Broken Egg Cafe.

“Kevin’s appointment is part of our efforts to strengthen our franchise system while ensuring sustained growth and operational excellence. Growing up in New Orleans, Kevin’s values align with those of the company; he understands our culture and shares my vision for Another Broken Egg Cafe, making him the perfect candidate to solidify our well-rounded executive team.”

A seasoned professional with more than 30 years of experience, Armantrout’s career in the restaurant industry began at the age of 13. A former vice president of franchise development and franchisee for Ruth's Chris Steak House, Armantrout was part of the original team that grew the chain into a national franchise.

Most recently, he served as president and COO of Hoosier Hospitality Group, a franchisee of Ruth Chris and Another Broken Egg Cafe. Since becoming a franchisee of Another Broken Egg Cafe in 2012, Kevin has orchestrated the opening of the brand’s first restaurant in Indiana, as well as the first location slated to open early next year in Kentucky servicing the newly developed Holiday Inn Riverfront Convention Center.

Furthermore, under Armantrout’s leadership, Hoosier Hospitality Group inked a deal to develop 16 new Another Broken Egg Cafe locations throughout Indiana, Kentucky, and New Orleans by 2019.

“From its menu and focus on customer service to its real estate and values-driven management team, Another Broken Egg Cafe meshes well with my philosophy,” Armantrout says.

“I couldn’t be more excited to take on this new role at such a pivotal time for the company. As the new COO, the impact I plan to deliver is one that continues Another Broken Egg Cafe's momentum and expansion. I look forward to collaborating with Ron to strengthen the processes and systems that will ultimately ensure quality, consistency, and unlimited growth potential for our prospering franchise system.”

Fueling the company's growth is the rise in consumer demand for healthier options coupled with 2014’s rising culinary trends of Southern-inspired menu items.
