Spirited Sans Spirits

The preferred term is spiritfree, but regardless of the name these beverages do it right with complex flavors and textures. Here are the most-ordered spiritfree libations at four U.S. establishments.

Protea

$15 at Kumiko

Chicago

“The Protea is very textural. There is acidity, hints of baking spices, and a roundness which I believe guests find very appealing as well as unique in a nonalcoholic drink. It is also a gorgeous shade of mauve, which is what inspired the name—after a flower with a similar hue.” —Julia Momose creative director

The Players

  • Adzuki (Japanese red beans)
  • Verjus rouge
  • Benimosu (Japanese purple sweet potato vinegar)
  • Seedlip Spice 94
  • Fever-Tree Club Soda
  • Top Note Tonic
  • White chocolate and nutmeg for garnish
Southeast Visions

$5 at Acorn

Denver

“On the Booze Free menu, we have three different focuses. Our first is on coconut water and with that we incorporate a blackberry tea syrup that is made from tea grown locally. To that, we add a little lemon juice, and we use Fee Brothers’ bitters. That cocktail is really nice, because it’s fruit forward and has some spice from the bitters. People like it because crushed ice is a little like a slushie or snow cone.” —Chris Clewell bar manager

The Players

  • Coconut water
  • Lemon
  • Fee Brothers Aromatic Bitters
  • Teakoe Boardwalk Blackberry tea

$6 at Young American

Chicago

“We make a concentrate of a turmeric/ginger/peppercorn tisane that serves as our base, then add a hibiscus tea concentrate, lime juice, aquafaba, and a little sugar. The result is a tart, spicy, velvety combination that has the weight and palate impact of a cocktail without alcoholic ingredients. I think guests are drawn in by familiar ingredients and are excited by the presentation.” —Julia McKinley beverage director

The Players

  • Hibiscus tea
  • Citrus infused gum syrup
  • Aquafaba Lime juice
